Watercress Endive Orange Salad 

2 tablespoons of salad oil
4 tablespoons of cider vinegar
1 tablespoon of olive oil
1 tablespoon of Dijon style mustard
1/2 teaspoon of honey
1 large bunch of watercress or Bibb lettuce, torn, about 3 cups
3 heads Belgian endive, cut diagonally into thin strips
2 medium oranges, peeled and thinly sliced  

For dressing, in screw top jar combine salad oil, vinegar, olive oil, mustard, and honey. Cover, shake well. On individual plates arrange watercress or Bibb lettuce, endive and orange slices. Drizzle dressing over salad. garnish with snipped parsley, if desired. Makes 6 servings. 78 calories
