Tomato Sauce

2 tablespoons of oil
1 large onion
1 garlic clove
1/2 green pepper
3 or 4 diced tomatoes
1 teaspoon of salt
1 teaspoon of dried herbs (your favorite)
1 teaspoon of honey
pepper to taste



Heat oil in large skillet. Chop onion garlic and sauté in hot oil until limp and transparent. Chop green pepper and add to skillet. Continue to sauté until pepper is soft and onion is golden (about 10 minutes). Add tomatoes, herbs, honey, and pepper and cover; turn heat to low, and cook until tomatoes melt (another 10 -15 minutes). Serve over pasta.
