Sugar Free Walnut Rocks

1 stick (1/2 cup) of unsalted butter
1/4 cup plus 2 tablespoons of light honey
2 tablespoons of molasses
1 egg, beaten
1 1/4 cup of whole wheat pastry flour
1 teaspoon of baking powder
1/2 teaspoon of cinnamon
1/2 teaspoon of ground cloves
1/4 teaspoon of baking soda
3/4 cup of rolled oats
1/4 cup of coarsely chopped walnuts
1/2 cup of chopped raisins
8 dozen walnut quarters, optional garnish


Beat butter in large bowl of electric mixer until light and creamy. Add the honey and molasses and beat again. Add egg and mix well. Sift flour, baking powder, cinnamon, cloves and baking soda into another bowl. Stir in rolled oats. Add dry ingredients to butter mixture alternately with yogurt, beating well after each addition. Stir in the chopped walnuts and raisins and mix until just incorporated. Preheat oven to 375ºF. Line baking sheet with waxed paper, oil paper. Drop dough by teaspoon ( about 1/2 to 3/4 inch diameter) onto baking sheet. Press walnut quarter on top of each cookie, if desired. Bake 10 - 12 minutes. Cool on wire rack. Store in airtight container.
