Peach Preserves

5 peaches, peeled and quartered
2 tablespoons of frozen orange juice concentrate
1 tablespoon of lemon juice
1 cup of cold water
1 envelop of unflavored gelatin
dash of salt
6 packs of Sweet 'n Low


Puree peaches in blender with orange juice, lemon juice, water, gelatin, and salt. Process at medium speed for half a minute. Pour fruit mixture into large saucepan. Bring to a boil over medium heat; boil for 5 minutes, stirring constantly. Remove from heat, skim off foam and stir in sweetener until it is dissolved. Pour into sterilized half-pint jars. Seal. Store in refrigerator or freezer.
