Apple Butter
2 quarts of tart apples 1 teaspoon of cinnamon 1/8 teaspoon of allspice 1/2 teaspoon of mace 2 cups of honey 1/2 lemon, juice and rind 2 cups of vinegar
Core and slice apples. Put all ingredients in a large kettle. Cook slowly for several hours, stirring often, until thick. Pour into hot, sterilized jars. Seal. Makes 6 pints. |
