| White Bean and Red Pepper Spread

16 ounces of White beans; 1 1/2 cups 1/3 cup of Red peppers; roasted 1 Clove garlic, minced 2 tablespoons of fresh lemon juice; up to 3 2 tablespoons of fresh parsley; chopped Salt and pepper to taste |

1. Combine beans, red pepper, garlic and lemon juice in a food processor. 2. Blend until smooth. 3. Stir in parsley, salt and pepper. Variations: Use roasted garlic. Substitute basil or dill for parsley.
