| Low Calorie Tamale Pie with Cornbread Crust

1 small onion, chopped No-stick cooking spray 1 pound of ground sirloin (lean) one 10 1/2 ounce can of condensed tomato soup one 4 ounce can of mushroom pieces & stems, drained 1 tablespoon of chili powder Salt & pepper to taste |

TOPPING: 1/2 cup of all-purpose flour 3/4 cup of yellow cornmeal 1 teaspoon of baking powder 1/2 teaspoon of baking soda 1 teaspoon of salt 1 egg, well beaten (use Egg Beaters) 1 cup of buttermilk 2 tablespoons of salad oil
Sauté onion in sprayed skillet until tender. Add meat and sauté until nicely browned, stirring with fork so that meat is broken up into small bits. Drain off any fat. Add remaining ingredients and mix well. Turn mixture into 8 1/2 inch square baking dish and cover with cornmeal batter made as follows: list of ingredients above. Mix and sift dry ingredients. Combine egg and buttermilk; add to dry ingredients, stirring just until well mixed; stir in oil. Spread batter evenly over meat mixture and bake in a hot 400ºF. oven about 30 minutes.
1/4 of whole makes a serving that will contain 3 ounces of meat and 2 servings of bread. |
