Low Calorie Vegetarian Manwich

1 pound of tofu, drained & mashed
2 tablespoons of  tamari sauce
1/4 cup of  shredded cheese or 2 tbsp. yeast "cheese"
2 tablespoons of  olive oil
1/2 cup of chopped onions
1/2 cup of chopped celery
1 green pepper, chopped
1 cup of catsup
2 teaspoons of vinegar
2 teaspoons of fresh lemon juice
2 teaspoons of salad mustard
1 tablespoon of  honey
1/2 teaspoon of  chili powder

Sauté onions, celery and green pepper in oil until tender. Add the tamari (or soy sauce) and "cheese". Add the tofu and cook until browned and crunchy. Add a little more oil as needed.

Combine remaining ingredients in a medium saucepan. Bring these to a boil and simmer 5 minutes. Add tofu, cook another 5 minutes. Serve in burger buns.
