| Low Calorie Holiday Pumpkin Pudding

1 cup of evaporated skim milk 1 cup of pumpkin puree (fresh or canned) 1/4 cup of egg substitute 1 egg white 1/2 cup of apple butter 1 teaspoon of vanilla 1/2 teaspoon of ground cinnamon 1/4 teaspoon of allspice |

Place milk into a 2 cup glass measuring pitcher. Microwave on high (100%) until warm, 1 minute. Whisk together the pumpkin, egg substitute, egg white, apple butter, vanilla and spices; add to warm milk; mix well.
Pour mixture into a 2 quart microwave ring mold. Microwave on high until just firm, 7 1/2-8 minutes rotating the pan a 1/4 turn every 2 minutes. Refrigerate until well chilled. |
