Low Calorie Curried Rice & Kidney Bean Salad

3 cups of brown rice, cooked
1 1/2 cup of  red kidney beans, cooked
4 green onions, chopped
1/2 green pepper, diced
2 stalks celery, diced
1/4 cup of  fresh parsley, chopped
1/4 cup of mayonnaise
1/4 cup of  plain low-fat yogurt
2 teaspoons of curry powder
Dash of freshly ground black pepper

Combine first 6 ingredients. Toss to mix. In a separate bowl, combine mayonnaise, yogurt, curry powder and black pepper. Blend thoroughly with rice/bean mixture. Yield: 6 servings. Approximately 145 calories per serving.
