Low Calorie Diabetic Easter Fudge

1 square of unsweetened chocolate
1/4 cup of  evaporated milk
1/2 teaspoon of  vanilla
1 teaspoon of  artificial liquid sweetener
1 package of  vanilla or chocolate artificially sweetened pudding powder
8 teaspoons of  finely chopped nuts (optional)

Melt chocolate in top of double boiler over boiling water. Add evaporated milk and mix. Cook for 2-3 minutes, then add vanilla and sweetener. Spread on small foil pan or plate. Chill. Cut into 8 pieces. Form into egg-shape balls and then roll lightly in pudding powder or chopped nuts.
