| Snowy 7 minute Frosting
2 egg whites
1 1/2 cups of sugar
1 1/2 teaspoons of light corn syrup or 1/4 teaspoon of cream of tartar
1/3 cup of cold water
1 teaspoon of vanilla |

Combine all ingredients except vanilla in top of double broiler. Beat 1 minute with electric mixer or rotary beater. Place over boiling water, beat constantly until frosting forms peaks, about 7 minutes, don't overcook. remove from boiling water. Pour into mixing bowl. Add vanilla, for tinted frosting, add a few drops of food coloring.
Beat until desired spreading consistency, about 2 minutes. Frosts two 8 or 9 inch layers.. |
