Fruit Cocktail Carrot Cake

2 cups of flour
1 cup of sugar
2 teaspoons of baking soda
1 1/2 teaspoon of cinnamon
1/2 teaspoon of allspice or nutmeg
One 30 ounce can of drained fruit cocktail
1/4 cup of vegetable oil
3 eggs
2 cups of grated carrots (2 carrots)
1 cup of chopped nuts

Mix dry ingredients. Reserve 3/4 cup fruit cocktail for garnish. Stir in fruit cocktail, coating each piece with flour mixture. Stir in rest of ingredients. Place in greased and floured 13"x9" pan. Bake 40 to 45 minutes at 350ºF.  

Cream Cheese Frosting:

1 pound of powdered sugar
8 ounces of cream cheese
1/4 cup of softened butter
2 teaspoons of vanilla
1/2 cup of chopped nuts

Beat ingredients together. Spread on cooled cake. Top with cocktail. Serves 12.
