| Farmhouse Carrot Cake
2 1/4 cups of all purpose flour 2 teaspoons of cinnamon 1/2 teaspoon of nutmeg 1/4 teaspoon of ground cloves 1 1/2 teaspoon of baking soda 1 teaspoon of salt 4 eggs 2 cups of sugar 1 1/2 cup of grated carrots (about 3 lg.) 1 1/2 cup of oil 1 cup of chopped nuts 1 cup of raisins |
| Mix flour, spices, soda and salt. Set aside. In a large bowl of mixer beat egg with sugar until fluffy and lemon colored. Add carrots and oil; mix well. Add flour mixture and stir to mix well. Pour into a greased and floured 9"x13"x2" pan. Bake in a preheated 350ºF. oven for 45 minutes or until pick inserted in center comes out clean. Cool in pan on a rack. Spread with frosting. Cream Cheese Frosting: Beat together 1 (3 oz.) package softened cream cheese and 1/4 cup softened butter or margarine. Add 2 1/4 cups sifted powdered sugar and a teaspoon of grated lemon or orange peel. Beat until smooth. Cookbooks | |
