| Carrot Date Cake
One 20 ounce can of crushed pineapple 1 cup of margarine, softened 3/4 cup of brown sugar, packed 3/4 cup of granulated sugar 4 eggs 1 pound of carrots, shredded One 8 ounce package of chopped dates 2 teaspoons of vanilla extract 3 cups of all-purpose flour 2 teaspoons of baking soda 1 teaspoon of ground cinnamon 1 teaspoon of ground ginger 1/2 teaspoon of salt Powdered sugar |
| Drain pineapple well. Beat margarine and sugars until light and fluffy. Beat in eggs. Beat in pineapple, carrots, dates and vanilla. Combine flour, soda, cinnamon, ginger and salt. Gradually beat in flour mixture until well blended. Pour batter into greased and floured 13x9 inch baking pan. Bake at 350ºF. for 50-60 minutes until cake tester inserted in center comes out clean. Cool completely. Sprinkle with powdered sugar. Serves 20. Cookbooks | |
