3 cups of grated carrots 4 Eggs 1 1/2 cups of oil 2 cups of sugar 2 cups of sifted flour 1 cup of chopped black walnuts 1 teaspoon of vanilla 1/4 teaspoon of black walnut extract 1 teaspoon of cinnamon Buttermilk Glaze 1/2 cup of buttermilk 1 cup of sifted powdered sugar 1/2 teaspoon of baking soda 1 tablespoon of white corn syrup |

Preheat oven to 350ºF.Grease a 10-inch tube pan. Mix all ingredients together. Bake 90 minutes. Remove from oven and, while cake is still hot, glaze with Buttermilk Glaze.
