Blackberry Jam Cake
 

 

Blackberry Jam Cake

2 cups of sifted flour
1 teaspoon of baking powder
1 teaspoon of soda
1 teaspoon of cinnamon
2 cups of sugar
1 cup of blackberry jam
3 eggs, beaten
1 cup of plumped raisins
1 cup of buttermilk
1 cup of chopped pecans
1 package of flaked coconut

Sift the flour, baking powder, soda, cinnamon, and sugar together in a bowl. Combine the remaining ingredients and mix, then add the flour mixture, mixing well. Turn into three 9 inch cake pans. Bake at 350ºF.  for 30 to 40 minutes or until the cake tests done.

Icing
4 tablespoons of flour
1 1/2 cups of evaporated milk
1 1 /2 cups of sugar
1 cup of flaked coconut
1/4 cup of blackberry jam
1 cup of ground raisins
1 cup of butter
1 cup of chopped nuts

Mix the flour to smooth paste with a small amount of the milk, then combine all of the ingredients in a saucepan. Cook, stirring constantly until of spreading consistency. Spread between the layers and over side  and top of cake.
