Brown Sugar Boiled Frosting

Brown Sugar Boiled Frosting

1 1/2 cup of brown sugar, firmly packed
1/3 cup of water
2 egg whites
1/4 teaspoon of salt
1 teaspoon of vanilla

Boil the sugar and water to 240ºF. on candy thermometer or until a small quantity dropped in cold water forms a medium firm ball. Beat egg whites stiff. Gradually add syrup to egg whites, beating constantly until frosting holds its shape. Add salt and vanilla. Makes enough to fill and frost one 8 inch layer cake.
