Boiled Chocolate Frosting

1 cup of sugar
2 tablespoons of cocoa
1/2 cup of cream or evaporated milk
1 teaspoon of vanilla

Mix all of the ingredients in a saucepan. Boil to the soft ball stage (234º - 238ºF. on candy thermometer). Remove from heat and beat until thick enough to spread on the cake.

Boiled Chocolate Frosting 2

1 stick butter
2 squares chocolate
1 teaspoon of  vanilla
3/4 cup of milk (can)
2 cups of  granulated sugar

 

Put all ingredients in saucepan except vanilla. Heat on low until sugar melts. Turn heat up, when mixture boils cook 4 minutes, stirring occasionally. Remove from heat and add vanilla. Beat until creamy enough to spread. Makes enough for 3 layers.
