8 eggs, beaten 3 scallions, sliced 1 1/2 cups of bean sprouts 2 celery stalks including tops, minced 1 recipe of Chinese gravy |

Add all the vegetables to beaten eggs and stir together. Cook the mixture in a lightly oiled pre heated frying pan as you would pancakes, turning once. Place in a shallow casserole dish and cover with Chinese gravy. Serve over cooked rice with a little soy sauce if desired.
