| | Popover Pizza Casserole
1 pound of ground raw turkey or ground beef 1 cup of chopped onion 1 cup of chopped green sweet pepper one 15 ounce can or one 15 1/2 ounce jar of pizza sauce one 2 ounce can of mushroom stems and pieces, drained 1/2 of a 3 1/2 ounce package of sliced pepperoni, halved 1/2 teaspoon of fennel seed, crushed 1/2 teaspoon of dried oregano, crushed 1/2 teaspoon of dried basil, crushed 2 eggs 1 cup of milk 1 tablespoon of cooking oil 1 cup of all purpose flour one 6 ounce package of thinly sliced mozzarella cheese 1/4 cup of grated Parmesan cheese
In a large skillet cook meat, onion, and green pepper till meat is brown and vegetables are tender. Drain fat. Stir in pizza sauce, mushrooms, pepperoni, fennel seed, oregano and basil. Bring to boiling, reduce heat. Simmer, uncovered, for 10 minutes, stir occasionally. Meanwhile, combine eggs, milk, and oil. Beat with an electric mixer on medium speed for 1 minute. Add flour, beat for 1 minute more or until smooth. Grease sides of a 13x9x2 inch baking dish, spoon meat mixture into dish. Arrange cheese slices over hot meat mixture. Pour egg mixture over cheese, covering completely. Sprinkle with Parmesan cheese. Bake in a 400ºF. oven for 25 to 30 minutes or till top is puffed and golden. Serve immediately. Makes 8 servings |
