Ham & Macaroni Casserole
one 7 ounce package of elbow macaroni 1/4 cup of butter 1/2 cup of chopped green pepper 1/2 cup of chopped celery 1/3 cup of chopped onion 3 tablespoons of flour 2 teaspoons of celery seed 1/2 teaspoon of salt 1/8 teaspoon of pepper 1 1/2 cup of milk 2 cups of shredded Cheddar cheese 2 cups of diced cooked ham 1 cup of cottage cheese 2 eggs, slightly beaten 1/4 cup of pimento |

Cook the macaroni according to package directions, then drain. Melt the butter in a 1 quart saucepan. Add the green pepper, celery, onion and cook over low heat for 2 to 3 minutes. Blend in the flour, celery seeds, salt and pepper and remove from heat. Stir n the milk gradually, then cook over medium heat, stirring constantly, until mixture comes to a boil. Cook for 2 minutes, stirring frequently. Add the macaroni, Cheddar cheese, ham, cottage cheese, eggs and pimento and blend well. Turn into a buttered 2 quart casserole. Bake in 350ºF. oven for 30 minutes. Remove from oven and let stand for several minutes. Garnish with parsley and serve. 8 - 10 servings
