Deli Reuben Casserole

 

Deli Reuben Casserole

3 cups of sauerkraut
1 1/2 cups of tomatoes, drained
2 tablespoons of Thousand Island dressing
2 tablespoons of butter or margarine
3 packages of corned beef, shredded
one 10 ounce can of refrigerated flaky biscuits
3 rye crackers, crushed
1/4 teaspoon of caraway seeds

 

Spread the sauerkraut in a 13x9x2 inch baking dish, arrange tomatoes on top, spread with dressing, dot with butter. Place shredded corned beef and cheese over all. Separate each biscuit into halves, arrange over casserole. Sprinkle with the rye crackers and caraway seeds. Bake at 350ºF. for 12 minutes or until biscuits are flaky and golden. Serves 6
