| Smoked Pork Ribs
3 pounds of smoked loin or pork 1 onion 1 tomato, peeled and seeded 1 stalk celery, chopped 1 cup of apple juice salt and pepper to taste |

If necessary to get it into your 3 quart casserole, cut pork into several pieces. Place in casserole with remaining ingredients, cover casserole, and simmer gently 1 1/2 hours. Add more apple juice from time to time if needed, but never very much. At the end it should all have evaporated. Serve pork with sauerkraut and mashed potatoes and with a good snappy mustard on the side. Serves 4
