Low Calorie Squash Casserole

 

 

Low Calorie Squash Casserole 1

Categories: Low Calories, Casserole, Squash, Ground Beef, Tomatoes

1 medium squash, chopped (yellow or zucchini)
1 medium onion, chopped
1 pound of  ground beef or turkey
1 teaspoon of oregano
1 teaspoon of oil
3 medium tomatoes, chopped
Salt and pepper to taste
Bread crumbs
Cheese (Parmesan or Cheddar)

Stir fry zucchini and onion together in oil until clear. Brown meat in separate pan. Mix meat mixture with squash mixture. Add remaining ingredients. Heat together until thoroughly blended. Pour meat mixture into greased casserole dish. Sprinkle bread crumbs and cheese on top. Microwave until cheese melts or is thoroughly heated. Use turkey and leave off cheese or substitute lowfat cheese.
