Ham & Chicken Casserole

 

Ham & Chicken Casserole

1/4 cup of melted butter or margarine
1/4 cup of all purpose flour
2 cups of milk
1 cup of chopped, cooked chicken or turkey
1 cup of chopped, cooked ham
1 cup of cooked rice or macaroni
1/2 cup of chopped celery
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 cup of shredded process American cheese
a dash of paprika

Combine butter and flour in a saucepan, cook over low heat, stirring until bubbly. Gradually add milk, cook, stirring constantly, until thickened and smooth. Remove from heat. Add chicken, ham, rice, celery, salt and pepper. Spoon mixture into a lightly greased 1 1/2 quart casserole dish. Bake at 400ºF. for 15 minutes or until bubbly. Remove from oven, sprinkle with cheese and paprika, and bake an additional 5 minutes or until cheese melts. Yield: 4 servings
