| Cook each vegetable separately from the rest. Drain. Melt 3 tablespoons of the butter. Blend in flour smoothly. Add milk and cook, stirring constantly, until thickened. Put vegetables into a deep 2 quart casserole and pour sauce over them. Top with mashed potatoes. Dot with remaining tablespoon of butter. Bake at 400ºF. until the top is golden brown, about 20 - 25 minutes. Serves 6 |
