Baked Lasagna

1 pound of ground beef
Olive oil Basic-Recipes.com 9/12/06
1 medium onion, chopped
1 clove garlic, chopped
1 teaspoon of parsley
two 6 ounce cans of tomato paste
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 small can of mushrooms, thinly sliced
3/4 pound of lasagna noodles
2 eggs
Grated Parmesan cheese
3/4 pound of cottage cheese
3/4 pound of Mozzarella or American cheese, grated

 

Brown the ground beef in oil with onion, garlic and parsley. Add tomato paste, 2 cups of water, salt and pepper. Simmer for 1 hour. Add mushrooms and simmer for 30 minutes longer. Add lasagna noodles to 5 quarts salted, boiling water to which 2 tablespoons of olive oil has been added. Cook for 15 minutes or until tender. Mix eggs with Parmesan cheese. Arrange lasagna in baking dish in layers. Alternate with layers of sauce, noodles and cottage cheese until lasagna is all used up. Sprinkle top with Mozzarella cheese. Bake at 350ºF. for 25 minutes or until the Mozzarella cheese is melted. Makes 8 - 10 servings
