| Asparagus Crab Casserole
2 tablespoons of butter 2 tablespoons of flour 1 2/3 cup of milk 1/4 cup of grated sharp Cheddar cheese 1/4 cup of grated Swiss cheese 1 teaspoon of salt 1/8 teaspoon of pepper 30 cooked asparagus spears 1/2 pound of crab meat grated Parmesan cheese |

Melt the butter in a saucepan, then stir in the flour. Add the milk gradually, stirring constantly, to make a smooth sauce. Add the Cheddar and Swiss cheeses and stir until melted. Add the seasonings and simmer for 10 minutes loner. Line a 2 quart baking dish with asparagus and sprinkle with additional salt and pepper. Place a layer of crab meat over the asparagus and cover with the sauce. Sprinkle heavily with Parmesan cheese. Bake at 375ºF. for about 20 minutes. 8 - 10 servings |
