Basic Sourdough Muffins
 
 
2 cups of sourdough starter
 1 1/2 cup of whole wheat flour
 1 teaspoon of salt
 1 teaspoon of soda
 1/2 cup of melted bacon drippings
 2 eggs
 1/2 cup of sugar


Sift the dry ingredients into a bowl. Mix fat and eggs with the starter. Make a well in the center of the dry ingredients and add the mixed starter. Stir just enough to moisten all the flour. Grease muffin tins and fill about 3/4 full. Bake at 375ºF. for 30 minutes. Raisins or chopped nuts or wheat germ may be added to the batter if desired. Makes 12 or more large muffins.
