| Raised Doughnuts 1/2 cup of warm water 2 packages of dry yeast 1/2 cup of shortening 1 1/2 cups of warm milk 1/2 cup of sugar 2 eggs 6 to 6 1/2 cups of flour |

Dissolve the yeast in warm water. Heat the shortening, milk, and sugar until shortening melts. Remove from heat. Cool slightly, then stir in eggs. Stir in yeast mixture. Add 4 cups of flour, mixing well. Add more flour as needed to make a soft dough. Knead until smooth and satiny. Place in a greased bowl and let rise in a warm place for 1 hour and 15 minutes. Punch down. Let it rise 55 more minutes. Roll out onto floured board to about 1/4 inch thickness. Cut with a doughnut cutter. Let it rise for 30 minutes. Deep fry in hot grease at 400ºF. until light brown. Turn to brown other side. Drain on paper towels. Sprinkle with confectioners' sugar, granulated sugar or frost.
