| | Low Salt French Bread
1 teaspoon of yeast 1 cup of lukewarm water 3 cups of flour
Dissolve the yeast in the water. Place 2 cups of the flour in the work bowl of a food processor and half of the yeast mixture to the flour. Pulse the food processor 4 or 5 times. Add the last cup of flour to the work bowl and blend for no more than 1 minute. If dough is sticky, slowly add more flour until it is well bonded and springy to the tough. Put rounded dough on a greased baking sheet, cover with a clean dish cloth and let rise for 2 hours or until doubled in bulk. Preheat oven to 400ºF. Form and place loaf on greased baking sheet, then let rest for 20 minutes. Bake for exactly 30 minutes.
