one 10 ounce package of chopped broccoli, thawed and drained
1/2 cup of buttermilk
1 large onion, chopped
4 eggs, beaten
1/2 cup of melted margarine
1 cup of sharp Cheddar cheese
one 8 ounce package of Jiffy corn bread mix
Mix the first 5 ingredients until thoroughly blended. Add corn bread mix
and cheese, stirring until just moistened. Pour batter into a 10 inch
cast iron skillet coated with vegetable cooking spray.
Bake at 425ºF. for 30 to 35 minutes.
