Banana Bread

1 cup of sugar
1/2 cup of butter or margarine
1 teaspoon of baking soda
1 tablespoon of sour milk or orange juice
2 eggs, well beaten
3 mashed, ripe bananas
2 cups of flour
1/4 cup of chopped nuts

Cream together the butter and sugar. Stir soda into sour milk or orange juice. Add the eggs, bananas, soda mixture and flour, beating thoroughly. Stir in the nuts. Pour into a buttered loaf pan. Bake in a 350ºF. oven for 1 hour. Cool before slicing. Freezes well. Makes 1 loaf  Tried and tested: I used two small loaf pans. I also melted the butter in the microwave. I checked for doneness with a wooden toothpick, It took 1 hour and 10 minutes. My kids and neighbor loved it!

Banana Bread 2

3 large bananas
2 eggs
1 cup of  sugar
1 stick of butter, soft
2 cups of self-rising flour
1 teaspoon of  vanilla
1 teaspoon of soda

Cream butter and sugar. Add 2 eggs, 1 teaspoon vanilla, bananas, and flour, soda, and nuts. Put in greased baking pan and cook at 350ºF. for 1 hour and 15 minutes.
