| | American Flag Cake #2
1 package (18 1/2 ounces) of yellow cake mix
1 package (3 3/4 ounces) of vanilla instant pudding mix
1/2 cup of vegetable oil
1 cup of water
4 eggs
1/2 teaspoon of almond extract
1 cup (1/2 pint) of heavy cream, whipped
2 tablespoons of confectioners' sugar
1 cup of blueberries
1 pint of strawberries, hulled and sliced in half
3 bananas
2 tablespoons of orange juice
1/2 cup of apple jelly, melted
Preheat oven to 375ºF. Grease and flour a 13 X 9 X 2-inch pan. In large bowl, combine cake mix, pudding mix, oil, water, eggs, and almond extract. At low speed of electric mixer, blend at medium speed for 2 minutes. Pour batter into prepared pan and bake for 40 to 50 minutes or until center springs back when touched lightly. Cool right side up in pan for 20 minutes, then turn out onto serving plate or foil-covered cardboard. Cool completely. Blend whipped cream with confectioners' sugar. Spread evenly on cake. Mark off blue row in upper left hand corner of cake and place blueberries in rows. Make stripes by lining up rows of sliced strawberries and bananas. Dip banana slices in orange juice before placing on cake. Brush melted apple jelly onto fruit. Refrigerate cake in not serving immediately. Serves 12.
