1 cup of bulgur wheat, , rinsed 2 cups of boiling water 2 cups of peeled, diced tomatoes 1 cup of finely chopped scallions 3 tablespoons of chopped fresh mint or 2 teaspoons of dried mint flakes, crumbled 1 cup of finely chopped parsley 1/2 cup of olive oil 1/2 cup of lemon juice 2 1/2 teaspoons of salt 1/4 teaspoon of freshly ground black pepper Romaine lettuce leaves or cucumber slices
Place bulgur into medium bowl and pour boiling water over it. Allow to sit for at least 1 hour to absorb moisture. Drain bulgur, turn into large bowl and add tomatoes, scallions, mint, parsley, olive oil, lemon juice, salt and pepper. Cover and chill well. Tabbuli can be eaten with romaine lettuce leaves or cucumber slices. Also great with pita bread. Makes 6 cups |
