Cucumbers with Yogurt
2 large cucumbers, peeled and thinly sliced Salt 1/4 teaspoon of freshly ground black pepper 1 cup (1/2 pt.) of plain yogurt 1/2 teaspoon of ground cumin 1/2 teaspoon of ground coriander 1 tablespoon of lemon or lime juice 1/4 to 1/2 teaspoon of salt |

Layer cucumber slices in shallow, flat pan and salt lightly. Cover with plastic film and refrigerate for at least 1 hour or longer. Drain off liquid from cucumbers. In a medium bowl, blend pepper, yogurt, cumin, coriander and lemon juice. Add cucumbers and 1/4 to 1/2 teaspoon of salt, toss well. Serve as an accompaniment to curries, roasted meats, fish or chicken. Makes 3 cups
