Cold Mushroom Cucumber Salad

3 cucumbers, scrubbed, scored with a fork, and sliced thin
1/2 to 3/4 pound of fresh raw mushrooms, sliced
1 1/2 to 2 teaspoons of toasted sesame seeds
2 teaspoons of Kikkoman Soy sauce
1 teaspoon of salt
4 tablespoons of mild wine vinegar
2 envelopes of Sweet n Low



Dissolve the sweetener in wine vinegar and add all of the other seasonings. Toss with cucumbers and mushrooms and refrigerate. If you wish, you can garnish this with chopped scallion. It tastes best if you use it the day it is made. Serves 6 to 8
