4 1/2 to 5 pounds of spareribs (1/2 to 3/4 pound per person) Hickory Barbecue sauce
To roast spareribs: Preheat oven to 450ºF. Place spareribs in shallow foil lined pan. Roast spareribs 30 minutes. Pour off excess drippings. Reduce temperature at 350ºF. and continue roasting 45 minutes. Brush spareribs with Barbecue sauce and roast 10 to 15 minutes or until browned. Cut into strips to serve.
To grill spareribs: Preheat grill or prepare and light charcoal grill. Cut most of excess fat off the ribs. Place the ribs on grill about 5 inches from source of heat and grill slowly for about 45 minutes, basting ribs with lightly salted water and turning frequently. Brush with Barbecue Sauce and grill slowly 20 to 30 minutes longer, until glazed and tender. This method keeps the sauce from burning excessively. It also allows more smoke flavor to penetrate through the ribs. Heat Hickory Barbecue sauce and serve as a dip for ribs. Makes 6 to 8 servings |
