Turkey Oyster Balls

1/4 cup of oysters
1/2 cup of cooked turkey
1/2 teaspoon of ground mace
1/4 teaspoon of pepper
1/4 teaspoon of celery salt
2 tablespoons of heavy whipping cream
1/4 cup of blanched almonds, finely chopped
1/4 cup of dry bread crumbs
Oil for deep frying

Heat oysters in a small quantity of water for 3 minutes. Remove oysters from pan and reserve 1 tablespoon of liquid. Grind oysters and turkey in food grinder or food processor. Add mace, pepper, celery salt, reserved oyster liquid, cream and egg yolks to ground oysters and turkey. Stir until well blended. Spoon into jar with lid or covered bowl and chill for 24 hours. Form turkey mixture into small balls. Combine almonds and bread crumbs, then roll balls in this mixture until well coated. Deep fry balls in oil until golden brown. Serve hot on toothpicks. Makes 3 dozen
